Vat2 has been not healthy and fermentation process never completed at the Hütte to start giving any color. There was a moment in early August that gave a hint of blue… but with the cold summer this year, it has stayed brown.
Looking at the weather forecast last week, I decided to bring a part of the vat home (20L, as much as I could fit in 20L bucket and carry with a cargo bike). It has been staying at my bathroom since… and suddenly today, I noticed it started to give color. It has a lot of purple simmer on the surface and color test is showing bright blue! yey!
I have been mixing once a day and nothing more special. It maybe really just about temperature being stable. The vat temperature has been always 22-23 degrees in my bathroom.
For the next year, it maybe good to note that we need over 20 degrees (including night time) for the vat to start the fermentation process. and If it is not possible at the garden, it may make sense to do the first part of the fermentation at home and bring the already started vat to the garden.
